A delicious take on traditional nachos, these Almond Butter Apple Nachos are a cute addition to any party, make a quick and healthy dessert, or if you’re like me…they also make a good breakfast too!
Almond Butter Apple Nachos with Pomegranate Sauce
Ingredients: 4 granny smith or red delicious apple, thinly sliced 4 tablespoons of almond butter (warmed for easier spread) 2 teaspoons of cinnamon 1/4 cup of pomegranates 2 tablespoons crushed pecans (or any other nut) 1 tablespoon of cacao nibs
Pomegranate Sauce 1/4 cup of pomegranate seeds 1 tablespoon almond milk yogurt *I use the brand Kite Hill – and I’m obsessed! 2 tablespoons raw local honey
Directions: 1. Wash and core apples, thinly slice and plate 2. Pomegranate sauce; in a food processor combine all ingredients and mix for 1-2 minutes 3. To warm the almond butter, remove cap and place the jar in a pot of water to boil – this will allow the almond butter to melt for easier drizzle 4. Sprinkle cinnamon and almond butter on top of sliced apples 5. Drizzle pomegranate sauce on top, add crushed pecans, and cacao nibs to garnish 6. DEVOUR!
