Blueberry pancakes hold a very special, sacred place in my heart. In October 2014, I lost my mom after a two year cancer battle. Breakfast was our favorite meal, and no matter what I had going on in my life I would always try to go to her house in the morning and make breakfast with her and for her when she didn’t have to strength to. She would always make sure there was a fresh, organic bunch of blueberries in the refrigerator for me, since it is my favorite fruit. Blueberry pancakes became our thing, we worked on several different vegan, gluten-free recipes to perfect the perfect blueberry pancake.
Easy-Breezy Blueberry Pancakes: (makes two) Ingredients: -1 ripe banana -1 flax egg (or egg) -1 tbsp ground flax seeds -1 tbsp hemp seeds -1 tsp cinnamon -1/2 cup blueberries (or desired fruit)
Directions: -Mash banana in a bowl -Add flax egg or egg -Add additional flax seeds or hemp seeds -Mix! -Grease skillet with coconut oil, pour mixture onto heated skillet & cook thoroughly -BOOM!
