Pumpkin Chocolate-Chip Bites

My favorite time of year is here – FALL! The Fall season is the unofficial time for all things pumpkin flavored..and all things delicious! These Pumpkin-Chocolate Chip Bites are the perfect, guilt-free dessert snacks to kick off pumpkin everything season.


Similar to my recipe for Oatmeal Raisin Cookie Dough Bites, this recipe is vegan, gluten-free, and zero baking is required! Protein packed (hemp seeds are a plant based protein superfood!), these Pumpkin Chocolate-Chip Bites are a great mid-day snack or..after dinner dessert!


Pumpkin Chocolate-Chip Bites

Ingredients:

(Makes about 20 bites) -3 cups rolled oats (I used Bob’s Red Mill Gluten Free Oats) -1 cup of non-GMO Pumpkin Puree -1 cup of almond butter -2/3 cup of organic maple syrup -1/2 teaspoon of cinnamon -1/2 tablespoon vanilla extract -3 tablespoon ground flax seeds (if you don’t have ground, simply chop flax seeds) -1/2 cup cacao nibs (I use Navitas Naturals – you can use sweetened or unsweetened!) -4 tablespoons hemp seeds  (Navitas Naturals!) -1/2 cup chopped pecans (or you can use almonds or walnuts)

Directions: -Simply mix all ingredients in a bowl until dough-like mixture is formed -With clean hands, roll into balls and set in refrigerator for 10 minutes prior to serving


Gluten-free rolled oats


Add almond butter + pumpkin puree


Add chopped pecans (or almonds/walnuts)


Add unsweetened cacao nibs (aka chocolate chips)


Mix all ingredients together until dough-like mixture is formed


With clean hands..roll, roll, roll!


So much deliciousness packed in a small bite!


Refrigerate for 10 minutes and serve, devour and ENJOY!
