So, I’m still recovering from my wisdom teeth surgery..chewing really is a luxury I have learned. I’m not rushing the healing process though, my body needs time to heal and I will allow it to do so! So I’ve been drinking green smoothies, pureès and soups (and feeling pretty good!). So tonight I’m making roasted garlic cauliflower mash BEST alternative to white potatoes. I’ll still eat white potatoes..but it’s nice to mix it up a bit & keep it fresh!
Roasted Garlic Cauliflower Mash Ingredients: -1 medium size cauliflower -2 or 3 garlic cloves (roasted) To roast garlic: place garlic on tin foil, drizzle olive oil, and bake in oven for 30 min or until golden brown. -Salt & pepper to taste
Directions: -Chop cauliflower into florets & place in medium size sauce pan to steam until fork tender -Roast garlic on 350° in oven/toaster oven until golden brown (about 30 min) -Drain cooked cauliflower, place into food processor along with roasted garlic and desired seasonings. -BLEND & ENJOY!! Dairy-free and guilt-free, this makes a perfect side dish or main dish!
*BONUS* You can even try adding one small yukon gold potato to the mix as well, it will mask the cauliflower taste for any family members that aren’t a huge fan of cauliflower!
